Stir-fried Meatballs with capsicums, sweetpeas and carrots


This is a very easy and simple dish which goes great with rice. I do my marketing only once a week, so I usually buy some minced meat and marinate before dividing them and keep in tubs ready to cook whenever I want. This time I cook my minced meat stir fried with my favourite vegetables which are sweet peas and capsicums. The carrots are thrown in for colour. All you need to do is..

have about 300g of minced meat (mine is pork) marinated with soya sauce (to taste), pepper (a pinch), 5 spices (a pinch is good enough), sesame oil (1 T), and 2 T of cornflour, mixed all together and roll them into balls;
1 capsicum cut into stripes;
1 carrot, sliced thinly;
about 200g of sweetpeas, more if you wish;
2 cloves garlic, minced;
2 T of vegetable oil;
about 1/4 cup of water
A good pinch of crushed black pepper

next you heat up your wok or frying pan with 2T veg oil and fry garlic till fragrant. Add carrots and then the meat balls. Keep stirring until the meat are cooked. Add the water and about a tablespoon of soya sauce and also a pinch of crushed black pepper. When the water has reached simmering point, add capsicum and sweat peas and stir fry for 2 minutes or until vegetables are cooked. Dish out and serve with white rice. Delicious!
